Potato Puff Casserole

2 LARGE EGGS
2 CUPS MASHED POTATOES
2 TBSP. MELTED BUTTER OR MARG
1/2 CUP MILK
1/2 CUP GRATED MED. CHEDDAR CHEESE
1/2 TSP SEASONED SALT
1/4 TSP. ONION POWDER

Beat eggs in medium bowl until smooth. Add potatoes, butter and milk. Beat to mix. Stir in cheese, seasoned salt and onion salt. Turn into greased 1 quart (1 L) casserole. Bake in 350 degree F (175) oven for 50 to 55 minutes until puffed and lightly browned. Makes 2 1/2 cups.

You can double the recipe and add your own seasonings to taste. Up to you.
When doubling the recipe cooking time will take a bit longer - a good way to tell it is done, is when it is golden brown and splitting at the top. It tastes fantastic with gravy on top …enjoy.
